One-Pot Cheesy Taco Pasta 🌮🧀🍝

Ingredients:

  • 1 lb ground beef or ground turkey

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 packet taco seasoning (or homemade)

  • 1 (10 oz) can Rotel (diced tomatoes with green chiles)

  • 1½ cups beef or chicken broth

  • 2 cups uncooked pasta (elbow or shells work great)

  • 1 cup shredded cheddar cheese

  • ½ cup sour cream

  • Salt & pepper to taste

  • Optional: chopped cilantro, avocado, or green onions for topping


Instructions:

1️⃣ In a large skillet or pot, brown the ground beef with diced onion and garlic. Drain excess fat.
2️⃣ Stir in taco seasoning, Rotel, broth, and pasta. Bring to a boil, then reduce heat to low.
3️⃣ Cover and simmer for 12–15 minutes, until pasta is tender.
4️⃣ Stir in cheese and sour cream until creamy and combined.
5️⃣ Top with your favorite taco toppings and serve hot!
