It's Meal Monday!

We just got back from an amazing family vacation in Colorado.  One of the highlights was fly fishing!  The boys had so much fun and even though the catch wasn't huge, the memories were.

All this fishing fun got me wanting to share with you a favorite way to cook up fish!  Butter and onions and cooking in tinfoil make this the perfect summer dinner.  

We typically cook it over the grill, but you could certainly adapt it to cook indoors in the oven. Enjoy this tasty catch friend!
